Zucchini & Spinach pesto
Pesto is an easy and flavorful sauce to add to any pasta. I am always working to find ways to add veggies to pasta dishes and this pesto recipe does just that. Enjoy!

TIME TO COOK: about 25 minutes
INGREDIENTS
1 green zucchini
½ cup parmesan
½ cup basil
14.5 oz spinach
½ cup pine nuts
½ cup olive oil
2 tbsp butter
1lb pasta
INSTRUCTIONS
Cook pasta according to directions on packaging.
Cut zucchini into 1 inch pieces. In a medium size saute pan, add ½ tbsp olive oil. Add the zucchini. Allow to cook for about 5 minutes, stirring regularly.
Add parmesan, basil, spinach, pine nuts, olive oil, and zucchini to a food processor or blender. Combine thoroughly.
Once pasta is cooked and drained, combine pasta with the pesto. Add two tbsp of butter to the pan. Mix until thoroughly combined.
Serve!
TIP: You can add less than the full recipe of pesto to the pasta. Pesto can have a really powerful flavor, so make sure you taste as you add. Any extra pesto can be stored in the fridge for two days!
