Basil & Tomato Chicken
This is my FAVORITE marinated chicken recipe I’ve made. I served the chicken with my rosemary potato recipe, but you could serve this with any of your favorite sides or on a salad or bowl.

TIME TO COOK: about 30 minutes (plus marinating!)
INGREDIENTS
1 lb chicken breasts
1 tbsp tomato paste
½ tbsp oregano
¼ tsp onion powder
4 smashed cloves of garlic
1/8 cup diced basil
1 tbsp butter
INSTRUCTIONS
In an airtight container, place the chicken breasts, tomato paste, oregano, onion powder, garlic, and basil. Allow to marinate for 1-2 hours in the fridge.
When the chicken is nearly done marinating, pre-heat oven to 425F and line a medium baking sheet with parchment paper.
Remove chicken from the fridge and lay on the baking sheet.
Put in oven for 12 minutes. Flip the chicken and place about ¼ tbsp of butter in the center of each chicken breast.
Put back in oven for an additional 12-15 minutes, or until chicken is thoroughly cooked (internal temperature above 165F).
Serve!
