Basil & Tomato Chicken

This is my FAVORITE marinated chicken recipe I’ve made. I served the chicken with my rosemary potato recipe, but you could serve this with any of your favorite sides or on a salad or bowl.

RECIPE CARD

TIME TO COOK: about 30 minutes (plus marinating!)

INGREDIENTS

  • 1 lb chicken breasts

  • 1 tbsp tomato paste

  • ½ tbsp oregano

  • ¼ tsp onion powder

  • 4 smashed cloves of garlic

  • 1/8 cup diced basil

  • 1 tbsp butter

INSTRUCTIONS

  1. In an airtight container, place the chicken breasts, tomato paste, oregano, onion powder, garlic, and basil. Allow to marinate for 1-2 hours in the fridge.

  2. When the chicken is nearly done marinating, pre-heat oven to 425F and line a medium baking sheet with parchment paper.

  3. Remove chicken from the fridge and lay on the baking sheet.

  4. Put in oven for 12 minutes. Flip the chicken and place about ¼ tbsp of butter in the center of each chicken breast.

  5. Put back in oven for an additional 12-15 minutes, or until chicken is thoroughly cooked (internal temperature above 165F).

  6. Serve!
