Apple Cinnamon Muffins
I bought two pecks of apples when I went on a quick weekend trip to Wisconsin in the beginning of October and I was so excited to bake with them. I decided to try a apple cinnamon muffin recipe. I generally find muffins to be really dry, so I decided to use half maple syrup and half white sugar for sweetener. It made SUCH a big difference in how moist the muffins are.
I used McIntosh and Honeycrisp apples for this recipe, but you can use any apple. I prefer more tart apples, but use what you have at home or what you can find at the grocery store.

INGREDIENTS: main ingredients
2 cups flour
3 tsp cinnamon
1/2 tsp baking powder
1/2 cup whole milk
1/2 cup butter
1/2 cup maple syrup
1/2 cup sugar
2 eggs
INGREDIENTS: combine with apples
4 apples (2 honey crisp, 2 McIntosh)
2 tsp flour
1 tsp cinnamon
INGREDIENTS: topping
3 tbsp brown sugar
2 tbsp white sugar
MAKES: 20-24
INSTRUCTIONS
Pre-heat oven to 350F. Add muffins liners to your muffin pan.
Peel and dice the apples. Thoroughly combine the diced apples with 2 tsp flour and 1 tsp cinnamon.
In a large mixing bowl, combine flour, cinnamon, baking powder, and sugar. Then combine butter, whole milk, maple syrup and eggs.
Evenly distribute the batter into the muffin sheet.
Place pan in oven and cook for 22 minutes.
Once you can put a toothpick into the muffins and remove without any residue, remove from oven. Allow to cool, then serve.
