Mexican Beef & Pepper Bowls
Ground beef is a product that I shied away from for a very long time while cooking. I tend to gravitate toward a leaner meat like ground chicken. However, there are times when I crave red meat and this is a delicious recipe to make when you’re in a rush.
The recipe calls for frozen peppers, but you can also use fresh peppers. I find that frozen peppers are a lot cheaper but also a lot more convenient to keep stocked in my freezer. I usually get the organic version from Whole Foods, but most grocery stores have them in their freezer section.
The spices used in this are my typical Mexican dish spices. I sometimes add variation, but this is a tried and true mixture. You can also use any pre-mixed taco seasoning that you have on hand. If you are looking for more spice, add in red chili flakes or a spicy salsa when serving.

SERVES: 3-4
INGREDIENTS
14.5 oz ground beef
3 cups frozen peppers
½ diced yellow onion
½ tbsp paprika
½ tbsp chili powder
¼ tbsp coriander
INSTRUCTIONS
Heat a medium sauté pan on medium heat. Add 3 cups of frozen peppers and ½ diced yellow onion. Allow the peppers to cook for about 5 minutes, stirring regularly.
In a large bowl, thoroughly combine the ground beef with paprika, chili powder, and coriander.
Add the ground beef mixture to the pan with the peppers and onion. Stir regularly. Cook until there is no visible pink and ground beef is thoroughly cooked (7-10 minutes).
Serve!
TIPS:
I served this with my Spanish rice and guacamole recipe. You could serve this with tortillas or on a salad.
