Ground Chicken Chili

Chili can be a really heavy and warming dish. I like to find ways to lighten it during the fall, so the use of ground chicken in this chili is perfect. It tastes like traditional chili, but has a unique lightness because of the ground chicken. Enjoy!

RECIPE CARD

TIME TO COOK: about 2.5 hours

INGREDIENTS

  • 3 tbsp chili powder

  • 1 yellow onion (chopped)

  • 1 lb ground chicken

  • 2 cans chili beans

  • 2 cans diced tomatoes

INSTRUCTIONS

  1. In a medium saute pan, add ¼ tbsp avocado oil, chopped onion, 1 tbsp chili powder and ground chicken. Cook on medium heat until chicken is thoroughly cooked and onions are opaque.

  2. In a large crock pot, combine 2 tbsp chili powder, ground chicken mixture, chili beans, and diced tomatoes.

  3. Cook chili on low for 2-5 hours. Stir every hour.

  4. Enjoy!
