Tomato Salmon with Orzo

Salmon, orzo and tomatoes are three of my favorite foods (plus some cheese). This is a delicious and grounding meal as we continue through fall. It is also super easy to make during the week. Enjoy!

RECIPE CARD

TIME TO COOK: about 30 minutes

INGREDIENTS: SALMON

  • 2 salmon filets

  • 1 tbsp basil

  • 1 tbsp oregano

  • 2 tbsp tomato paste

INGREDIENTS: ORZO

  • 8 oz orzo (I love Jovial)

  • 2 oz goat cheese

  • 2 oz feta

  • 2 roma tomatoes

INSTRUCTIONS

  1. Pre-heat oven to 425F. Line a small baking sheet with parchment paper.

  2. In a small bowl, combine oregano, basil and tomato paste. Toss the salmon filets in the mixture. Try to evenly coat the salmon with the mixture.

  3. Place salmon filets on baking sheet. Put in the oven for 20 minutes (internal temperature 145F)

  4. While salmon is cooking, cook orzo according to package.

  5. Once orzo is cooked and drained, combine tomatoes, goat cheese, feta, and orzo on low heat. Stir regularly and continue to heat until cheese is melted.

  6. Once salmon & orzo are done, serve!

TIP: You can put the tomatoes in a small sauté pan for about 5 minutes to soften them before putting in the orzo.
