Veggie Lo Mein

Quick, easy and light week night meal! I love that this packs in a ton of veggies. I worked to make the sauce as light as possible while still having great flavor.

RECIPE CARD

TIME: about 30 minutes

INGREDIENTS

  • 6 tbsp soy sauce

  • 1 tbsp brown sugar

  • 2 tbsp sesame oil

  • 3 cloves garlic

  • 1 tsp sesame seeds

  • 2 red peppers

  • 2 yellow peppers

  • 3 cups broccoli

  • 16 Oz noodles  

INSTRUCTIONS

  1. Cook noodles according to package.

  2. Dice garlic.

  3. Cut and clean peppers and broccoli. On medium, heat a large sauté pan with olive oil. Saute the garlic, peppers, and broccoli for about 5 minutes.

  4. After cooking the veggies for about 5 minutes, add ½ sauce to the pan with veggies. Continue to cook the veggies until they are your desired texture.

  5. Combine the cooked and drained noodles with the vegetable mix and the remainder of the sauce.

  6. Allow to cook on low for 2-3 minutes while stirring.

  7. Once thoroughly combined, serve!
