Salmon Mediterranean Bowl
This bowl combines my sweet potato fry, goat cheese spread, cucumber& tomato salad with a deliciously marinated salmon. Take what you want, leave what you don’t and add anything that you feel drawn to. Enjoy!
RECIPE CARD
TIME: about 1 hour (without marinating!)
INGREDIENTS: SALMON (marinade ingredients based on two filets)
1/4 tsp oregano
1/4 tsp basil
1/2 lemon juice
2 bay leaves
1/2 tsp olive oil
1 Salmon filet per individual

Goat Cheese Spread
INSTRUCTIONS: SALMON
Marinate salmon in oregano, basil, lemon juice, bay leaves, and olive oil for 1-3 hours in the fridge.
Heat oven to 425F.
After marinated, place on a lined baking sheet. Put in oven for 15 minutes. Then flip.
Place back in oven for an additional 10 minutes. Remove once salmon is fully cooked (145F internal temp).
Serve!
