Salmon Mediterranean Bowl

This bowl combines my sweet potato fry, goat cheese spread, cucumber& tomato salad with a deliciously marinated salmon. Take what you want, leave what you don’t and add anything that you feel drawn to. Enjoy!

RECIPE CARD

TIME: about 1 hour (without marinating!)

INGREDIENTS: SALMON (marinade ingredients based on two filets)

  • 1/4 tsp oregano

  • 1/4 tsp basil

  • 1/2 lemon juice

  • 2 bay leaves

  • 1/2 tsp olive oil 

  • 1 Salmon filet per individual

BOWL INGREDIENTS

  • Sweet Potato Fries

INSTRUCTIONS: SALMON

  1. Marinate salmon in oregano, basil, lemon juice, bay leaves, and olive oil for 1-3 hours in the fridge.

  2. Heat oven to 425F.

  3. After marinated, place on a lined baking sheet. Put in oven for 15 minutes. Then flip.

  4. Place back in oven for an additional 10 minutes. Remove once salmon is fully cooked (145F internal temp).

  5. Serve!
