Mediterranean Chicken with Orzo
I love Mediterranean meals in the summer. This recipe is great because you can mix and match and part of this recipe to create the ultimate dish. You can also accommodate as needed for any dietary restrictions that your group has. Enjoy!
RECIPE CARD
TIME: about 45 minutes (plus 1 hour for marinating)
INGREDIENTS
1/2 tsp garlic powder
1/2 tsp oregano
1/2 tsp Rosemary
1/2 tsp Basil
3 bay leaves
Olive oil
Lemon
2-4 chicken breasts
2 tbsp butter
1/2 cup freshly grated parmesan
INSTRUCTIONS
Combine garlic powder, oregano, rosemary, basil, bay leaves, 1 tbsp olive oil, 1 whole lemon worth of juice and chicken breasts in an airtight container. Allow chicken to marinate for about one hour prior to cooking.
Preheat oven to 425. Line baking sheet with parchment paper.
While oven is heating up, prepare orzo per instructions on package.
Cook for about 30 minutes. Flip halfway through (internal temperature of chicken should be above 165F).
Once the orzo is finished cooking, add ½ cup parmesan and 2 tbsp of butter. Add salt and pepper to taste!
Make a bowl from the chicken, orzo, and cucumber & tomato salad.
