Stuffed Peppers
What I love most about stuffed peppers is you can make them with any kind of ground meat - turkey, chicken, beef, bison… whatever you have at home! I made this batch with ground chicken - enjoy!

TIME TO COOK: about 30 minutes
INGREDIENTS
14.5 oz ground chicken
4 peppers (pick any variation you like!)
14.5 oz can diced tomatoes
Yellow onion (chopped)
½ tbsp coriander
½ tbsp paprika
½ tbsp chili powder
¼ tbsp garlic powder
INSTRUCTIONS:
Chop the onion.
Cut 4 peppers in half. Remove all seeds and stems.
Turn oven to 425F and line a baking sheet with parchment paper.
Place the peppers in the oven for about 10 minutes.
Brown the chicken with chopped yellow onion.
Once the chicken and onion are about halfway cooked, add the diced tomatoes (drained!) and the spices. Mix until thoroughly combined. Cook until onion is opaque, and the chicken is fully cooked.
Remove peppers from the oven and fill the halved peppers with the ground chicken and onion mixture.
Sprinkle top of peppers with sharp cheddar cheeses. Return to oven for 5-7 minutes (until cheese is melted and peppers are cooked to your desired texture!).
Serve!
