Vegetarian Chili
I love chili. This is a really light chili which is fabulous as the weather warms up. This is also great to pair with a salad.
RECIPE CARD
TIME: prep about 10 minutes, cooking 4-7 hours
INGREDIENTS
Yellow onion
1 14.5oz diced tomatoes
One can pinto beans
2 cans red kidney beans
2 tablespoons chili powder
2 tsp cumin
1 tbsp paprika
1 tsp garlic powder
2 tsp cumin
2 cups veggie broth
INSTRUCTIONS
Add 1 tbsp olive oil to a pan on medium heat. Add a chopped yellow onion. Cook until translucent.
Drain all beans. Add all ingredients (including cooked onion) to a crock pot. Cook on high for 4-5 hours or on low for 6-7 hours.
SERVE WITH: avocado, cheddar cheese, tortilla chips, or saltines!
