Zesty Asian Chicken

This is an easy meal prep to make. I made this for dinner on a Sunday and then used it for lunches the rest of the week!

RECIPE CARD

INGREDIENTS

  • 2 lbs chicken

  • 1 tbsp avocado oil

  • 1 cup flour

  • Rice

  • Green beans

 

FOR SAUCE

  • 3 tbsp sesame seeds

  • 1/3 cup honey

  • 3 diced garlic gloves

  • 1 1/2 tsp ginger

  • 1 tbsp rice vinegar

  • 1/2 cup soy sauce

  • 1/8 cup brown sugar

  • 1/2 Lime juice

 

INSTRUCTIONS

  1. Combine all sauce ingredients

  2. Start cooking rice per instructions on packaging

  3. Cut all chicken into 1 inch squares (ish)

  4. Combine chicken with flour

  5. Put sauce on stove on low. Stir regularly.

  6. Put avocado oil in a large pan on medium high. Allow to heat up for about 2 minutes.

  7. Add chicken to avocado oil. Cook until done (internal temp 165F).

  8. Once chicken is almost thoroughly cooked, add sauce to chicken.

  9. When chicken is thoroughly cooked and the rice is done, serve!!

 

NOTES: You can add as much or as little sauce as you’d like. If you think the sauce is too zesty, you can add more low sodium soy sauce at any point. Taste as you go! I also served with green beans to add some veggies to this dish.
