Crispy Smashed Potatoes

This is an easy side dish for SO many meals. I love to pair it with Mediterranean dishes.

RECIPE CARD

TIME: about 40 minutes

INGREDIENTS

  • 1/2 tbsp Garlic powder

  • Thyme

  • 2 tbsp butter

  • Small yellow potatoes

 INSTRUCTIONS

  1. Preheat the oven to 450. Line sheet pan with silicon mat or parchment paper.

  2. Boil water on stove. Add salt.

  3. Put small yellow potatoes in the boiling water. Allow to cook for 15-20 minutes (until soft)

  4. Take potatoes out of water and place in a bowl. Add 2 tbsp of butter to warm potatoes and allow to coat the outside of the potatoes. Add ½ tbsp garlic powder, salt and pepper.

  5. Place potatoes on sheet pan. Mash with a fork.

  6. Place in oven for 15 minutes, then flip. Put back in oven for about 15 minutes – take out when crispy!
