Vegetarian Bibimbap

Quick, easy and tasty meal! This is a light and healthy meal that can have a lot of flavor with the right toppings. I got the kimchi from our local farmer’s market.

RECIPE CARD

INGREDIENTS (per bowl)

  • 2 eggs  

  • 1 tbsp sesame seed

  • 1 tbsp olive oil

  • 1 zucchini

  • 1 carrot

  • handful of spinach

  • ½ green pepper

  • 1 cup cooked rice

  • “We Love You” Gochujang sauce

  • Kimchi

  • Sprouts

 

INSTRUCTIONS

  1. Heat oven to 425F. Line sheet pan with parchment paper.

  2. Cut and clean the zucchini, carrot, and green pepper. Drizzle vegetables in olive oil, salt & pepper, and sesame seeds. Place on sheet pan. Put in oven for 30 minutes. Flip halfway through.

  3. Cook rice according to instructions on packaging.

  4. Put 1 tsp olive oil in a small pan on low heat. Add spinach to pan and stir regularly until spinach is wilted.

  5. Cook 2 eggs over easy.

  6. Make the bowl. Add sesame seeds, Kimchi, Sprouts & Gochujang!
