Tomato, Spinach & lemon Pasta

This is a great pasta recipe for summer. It is light and refreshing. If you love lemon, this is a recipe for you. I really liked adding feta cheese on the top of this, but you can also serve with parmesan.

TIME TO COOK: about 1 hour

INGREDIENTS

  • 1 lb Jovial Penne

  • 1 pint cherry tomatoes

  • 1/4 tsp basil

  • 1/4 tsp garlic

  • 7 tbsp butter

  • 15 oz spinach

  • 1 lemon

INSTRUCTIONS

  1. Turn oven to 450F.

  2. Line a 9x13 pan with parchment paper. Cut 1 and ½ pint cherry tomatoes in half. Place in pan. Cover tomatoes with 1 tbsp olive oil. Add ½ tsp basil, ¼ tsp garlic powder, salt and pepper.

  3. Bake for 25 minutes.

  4. While tomatoes are cooking, begin boiling water for pasta.

  5. Once tomatoes are done, cook pasta according to package.

  6. In a large sauté pan, place tomatoes, 15 oz spinach and 2 tbsp butter in a pan. Cook until spinach has wilted.

  7. Once pasta is cooked, drain and transfer to sauté pan with spinach and tomatoes.

  8. Add 1 lemon worth of lemon juice and the remaining 5 tbsp butter into the pan.

  9. Allow to cook on low until thoroughly combined.

  10. Serve! Top with feta cheese if desired.
