Tomato, Spinach & lemon Pasta
This is a great pasta recipe for summer. It is light and refreshing. If you love lemon, this is a recipe for you. I really liked adding feta cheese on the top of this, but you can also serve with parmesan.

INGREDIENTS
1 lb Jovial Penne
1 pint cherry tomatoes
1/4 tsp basil
1/4 tsp garlic
7 tbsp butter
15 oz spinach
1 lemon
INSTRUCTIONS
Turn oven to 450F.
Line a 9x13 pan with parchment paper. Cut 1 and ½ pint cherry tomatoes in half. Place in pan. Cover tomatoes with 1 tbsp olive oil. Add ½ tsp basil, ¼ tsp garlic powder, salt and pepper.
Bake for 25 minutes.
While tomatoes are cooking, begin boiling water for pasta.
Once tomatoes are done, cook pasta according to package.
In a large sauté pan, place tomatoes, 15 oz spinach and 2 tbsp butter in a pan. Cook until spinach has wilted.
Once pasta is cooked, drain and transfer to sauté pan with spinach and tomatoes.
Add 1 lemon worth of lemon juice and the remaining 5 tbsp butter into the pan.
Allow to cook on low until thoroughly combined.
Serve! Top with feta cheese if desired.
