Ground Chicken Lettuce Wraps

A quick, easy and delicious recipe that is great for weeknights. I love this ground chicken recipe because you can serve it on cauliflower rice, rice, salad or in a lettuce wrap. I prefer to serve it with lettuce wraps because it is a light and protein packed lunch or dinner. Enjoy!

TIME TO COOK: about 30 minutes

INGREDIENTS

  • 14.5 oz ground chicken

  • 3 cloves garlic

  • 1/3 cup soy

  • 1/3 cup hoisin

  • 1/2 onion

  • 1/2 cup green onion

  • Butterhead lettuce

  • IF YOU WANT: white rice, cauliflower rice

 

INSTRUCTIONS

  1. Prepare the sauce. Combine 1/3 cup soy sauce and 1/3 cup hoisin.

  2. Chop ½ yellow onion. Chop green onion. Dice garlic.

  3. In a large sauté pan, place the 1 tbsp olive oil, onion and garlic. Cook on medium heat until the onion is transparent.

  4. Add the ground chicken and ¼ cup green onion. Cook for about 5 minutes on medium heat. Add the sauce to pan. Continue cooking until the chicken is thoroughly cooked.

  5. Serve!
