Pesto Chicken With Goat Cheese Orzo
The combination of goat cheese with pesto is one of my favorites. This variation is FANTASTIC. The best part about this recipe is that you can serve the chicken with other sides or you can serve the orzo with other mains (or eat either alone!).

TIME TO COOK: about 45 minutes
INGREDIENTS
1lb chicken breasts
Pesto Recipe
8 oz orzo
2 oz goat cheese
2 tbsp butter
INSTRUCTIONS
Make the pesto (linked here!)
Turn oven to 425F and line baking sheet.
Combine chicken breasts and pesto. I like to cut the chicken into strips so there is a higher pesto to chicken ratio.
Put the pesto covered chicken in the oven for about 20 minutes. Flip halfway through (internal temp should be 165F at thickest portion of chicken).
Make orzo per instructions. Drain orzo. Add the goat cheese and butter. Stir until thoroughly combined!
Serve chicken and orzo once both are cooked!
