The BEST GF Chocolate Chip Cookies
I’ve shared a lot of my gluten free cookie recipes, but realized I hadn’t shared my Almond Flour Chocolate Chip cookie recipe. They are so delicious and easy to make for a group of people. I love that these are gluten free and peanut free.
When working with almond flour, I’ve realized that it is so important to mix the dry and wet ingredients separately. It allows for there to be a complete combination of the ingredients once you combine them. My favorite brand of almond flour is Bob’s Red Mill. It has a smooth texture without any grainy aspects.
I call for both semi sweet and dark chocolate chips, but if you prefer one or the other, you can absolutely substitute.
RECIPE CARD
INGREDIENTS:
2 ¾ cup almond flour
2 eggs
10 tbsp salted butter (room temperature)
¼ cup brown sugar
½ cup maple syrup
1 tsp vanilla extract
1 tsp baking soda
½ cup semi sweet chocolate chips
½ cup dark chocolate chips
INSTRUCTIONS: COOKIE DOUGH
In a large both or mixing bowl, add butter, eggs, maple syrup and vanilla extract. Thoroguhly combine.
Next, add almond flour, brown sugar, and baking soda. Thoroughly combine.
Finally, add the chocolate chips.
Form cookie dough balls using a cookie scoop. Place in airtight container.
Allow to chill for 4-72 hours.
INSTRUCTIONS: BAKING
Pre-heat oven to 350.
Add parchment paper to a baking sheet.
Add the chilled cookie dough balls and bake for 10 minutes.
Allow to cool.
Serve!
