Lemon & Basil Chicken meatballs

If you're looking for a quick and easy meal to make this week, then this is the recipe for you. These meatballs are absolutely delicious. So I find the meatballs can get really dry, especially when using ground chicken. However, by adding zucchini to this recipe, it helps add more moisture to the meatballs.

These make for a great meal prep recipe because you can use them in so many different things. They are great in a bowl with rice or cauliflower rice. They're absolutely delicious with a pesto pasta. Further, they are a great addition to any salad that you want to add protein to.

The other amazing thing about these is they take such little time to bake in the oven. It takes about 30 minutes total to make 15 meatballs. You can also easily double or triple this recipe if you have a family that you want to meal prep for!

RECIPE CARD

INGREDIENTS:

  • 1 zucchini - finely shredded 

  • 1 cup breadcrumbs 

  • ½ cup shredded parmesan 

  • 1 small lemon juiced 

  • 1 tbsp basil 

  • 1lb ground chicken

INSTRUCTIONS:

  1. Pre-heat oven to 350F. 

  2. In a large mixing bowl, combine all ingredients. 

  3. Using a cooking scoop, evenly portion out the mixture into approximately 15 meatballs

  4. Evenly distribute onto a baking sheet. 

  5. Bake at 350F for 20 minutes (or until internal temperature is above 165F). 

  6. Serve!
