Mediterranean Chicken Breast Marinade
Some people have been requesting that I start sharing some of my “basics”. For me, this means simple proteins and vegetables that can be prepared quickly and are great for leftovers.
This mediterranean chicken recipe is one of my favorites. It is so simply to make on a Saturday or Sunday and then store for the rest of the week. It also has a ton of flavor, but the flavor is neutral enough that you can pair it with a ton of different sides. Below are some examples:
In a rice bowl
In a quinoa bowl
In a cauliflower bowl
In a wrap
On a salad
With russet potatoes
With baby potatoes
With sweet potatoes
If your chicken breasts are really thick, I recommend slicing the chicken breast in half horizontally. This will allow for the marinade to fully be absorbed into all of your chicken.

RECIPE CARD
INGREDIENTS:
1lb chicken breasts
½ tsp parsley
1 tsp oregano
1 ½ tsp basil
½ lemon juiced
INSTRUCTIONS:
In an airtight container, combine chicken breasts, parsley, oregano, basil and lemon juice.
Place in refrigerator for 1-5 hours.
Pre-heat oven to 425F.
Place chicken breasts on a greased baking sheet.
Bake in oven for 25 minutes (or until internal temperature is above 165F).
Serve!
