Blueberry Banana Muffins
I had some ripe bananas sitting in my kitchen with some blueberries in my fridge and decided to make this delicious recipe. Banana muffins are amazing because the bananas add an amazing amount of moisture.
When making any baked good with blueberries, it is important to fold in the blueberries with a spoon rather than using a hand mixer or stand mixer. By folding in the blueberries, it prevents them from getting chopped up in the mixer.
This is the perfect, easy, healthy (ish) breakfast or snack to have around the house for a busy week. Enjoy!
RECIPE CARD
INGREDIENTS:
4 ripe bananas
⅔ cup whole milk
¾ cup maple syrup
¼ cup coconut oil
1 egg
2 tsp vanilla
1 tsp baking soda
1 tsp baking powder
2 ½ cups flour
1 pint blueberries
INSTRUCTIONS:
Preheat oven to 350F. Add muffin liners to muffin pan or grease.
In a mixing bowl or a large bowl, combine bananas, milk, maple syrup, coconut oil, egg, and vanilla.
Next, add in baking soda, baking powder, and flour. Fully combine.
Finally, fold in the blueberries.
Evenly distribute muffins mixture to the muffin tins.
Bake for 18 minutes.
