S’more cookies
Smores are one of my favorite treats, but replicating them in the home will never be the same as making them around the campfire with loved ones. However, these cookies are a close substitute.
The key to these cookies are making sure that the cookie dough fully covers the marshmallows before you bake them. I used jumbo marshmallows that I cut in half, but you can use 4 mini marshmallows instead.

RECIPE CARD
TIME TO BAKE: 10 minutes
MAKES: 16 cookies
INGREDIENTS: COOKIES
1 cup room temperature butter
1 cup brown sugar
½ cup sugar
2 eggs
3 tsp vanilla
2 ½ cup flour
1 tsp baking soda
1 ½ cup jumbo chocolate chips
8 sheets graham crackers
8 jumbo marshmallows
INSTRUCTIONS: TO MAKE DOUGH
Add butter, brown sugar, and sugar to a large mixing bowl. Thoroughly combine using a hand mixer or standing mixer.
Add eggs and vanilla to mixture and thoroughly combine.
Next, add baking soda and flour. Thoroughly combine.
Break up the graham crackers and add them to the mixer. Thoroughly combine with mixture.
Finally, add in the chocolate chips.
Using a large cookie scoop, portion out the cookie dough. After the dough is in balls, take ½ of a jumbo marshmallow and place it in the middle of each ball. Using your hands, roll the dough around the marshmallow for each.
Once the marshmallow is thoroughly covered with cookie dough. Place the cookie dough balls in the refrigerator for 2 hours to 24 hours.
INGREDIENTS: TO BAKE
Pre-heat oven to 350F.
Place the cookie dough balls on a baking sheet.
Bake the cookies for 10 minutes.
Remove from oven, allow to cool.
Serve!
TIPS
The marshmallows will puff up in the oven. If your cookies start to fall apart in the oven, use a spatula to scoop them back together before they cool.
