Parmesan Smashed Potatoes

I love potatoes - in quite literally any form - but this is one of my favorite versions. This is a versatile side that can elevate any meal. It pairs really well with chicken or salmon based dishes, but you can serve it with any main. Enjoy!

RECIPE CARD

TIME TO COOK: about 40 minutes

INGREDIENTS

  • 1 lbs baby yellow potatoes – halved

  • 1 tsp garlic powder

  • 2 tbsp butter

  • ½ cup parmesan cheese

INSTRUCTIONS

  1. In a large pot, boil water.

  2. Turn oven to 425F and line a large baking sheet with parchment paper.

  3. Once the water is boiling, put the halved baby yellow potatoes in the water. Allow to cook for 15 minutes.

  4. After 15 minutes, remove the potatoes and roll in 2 tbsp butter, 1 tsp garlic powder, salt and pepper.

  5. Once the butter is melted, lay the potatoes on the baking pan, and smash them using a fork.

  6. After the potatoes are smashed, put the potatoes in the oven for 20 minutes.

  7. Remove the potatoes and shred ½ cup fresh parmesan on the potatoes. Place the pan back in the oven for 5 minutes.

  8. Serve!
