Salmon, Potatoes & Greens Sheet Pan

I LOVE salmon. My favorite brand is Oshen Salmon. I generally order 12-14 filets to use over the course of a few weeks. I have found it to be the most consistently fresh salmon on the market.

Further, sheet pans are such an easy way to pack in protein and veggies in a really light and flavorful way. The seasoning on this sheet pan is delicious and so easy. Enjoy!

RECIPE CARD

TIME TO COOK: about 1 hour

INGREDIENTS

  • ½  tsp garlic powder

  • ½ basil

  • ½ tbsp oregano

  • 1 lemon

  • 2 salmon filets

  • 14.5 oz green beans

  • 1 lb baby yellow potatoes

  • 1 bunch asparagus

INSTRUCTIONS

  1. Heat oven to 425F and line large baking pan with parchment paper.

  2. Wash and cut all potatoes in half.

  3. Toss potatoes in olive oil, oregano and salt & pepper.

  4. Place the potatoes on the baking pan, cook for 15 minutes.

  5. Toss salmon in garlic, basil and lemon juice.

  6. Place salmon in the middle of the potatoes.

  7. Cook potatoes and salmon for an additional 15 minutes.

  8. Toss the green beans and asparagus in olive oil and salt & pepper.

  9. Add green beans and asparagus to the pan.

  10. Cook green beans, asparagus, potatoes, and salmon for an additional 12 minutes.
