Ground Chicken Mediterranean Meatballs

These meatballs are delicious. Adding in the tomato paste helps prevent the meatballs from becoming dry and the seasoning makes it a great accent in bowls. In the image above, I served it with some oven baked sweet potatoes and my Cucumber & Tomato salad with rice. However, you could use this for meal prep for lunches, put on top of a salad, or serve as a main with your favorite sides. Enjoy!

TIME TO COOK: about 30 minutes

INGREDIENTS

  • 14.5 oz ground chicken

  • 4 oz tomato paste

  • 1/8 tsp coriander

  • ¼ tsp basil

  • ¼ tsp paprika

  • 1/8 tsp garlic powder

  • ¼ yellow onion

  • 1 bunch diced cilantro

 SERVED WITH: Cucumber & Tomato Salad, oven baked sweet potatoes, Jasmine rice

INSTRUCTIONS

  1. Line a large baking sheet with parchment paper. Heat oven to 400F.

  2. In a large bowl, combine all ingredients.

  3. Use cookie scoop to portion out meatballs on large baking sheet. Place meatballs in oven.

  4. Cook for about 20 minutes (internal temp ~165F). Serve!
