Over Easy Sunrise Bowl

This is a delicious and easy breakfast to make. While we're in the depths of winter in Chicago, I have been feeling inspired to make colorful recipes to help brighten my day! 

This recipe calls For over easy eggs. There are a lot of videos on the Internet to show how to make them, however, you absolutely can do scrambled eggs or whatever type of eggs is your preference.

I use a red bell pepper in this recipe recipe. I already had it in my refrigerator, which made it really easy to use. However, you can use any color of bell pepper that is your preference or that you have at home. 

Turkey bacon in this recipe because I prefer it to regular bacon, however, you absolutely could substitute in sausage or regular bacon rather than turkey bacon.

RECIPE CARD

INGREDIENTS: POTATOES 

  • 1 russet potato 

  • 1 tsp paprika

  • ¼ tsp garlic powder 

  • Salt & pepper 

INGREDIENTS: OTHER

  • 1-2 eggs 

  • 3 pieces of turkey bacon 

  • 1 bell pepper 

  • 1 tbsp feta (or your favorite cheese!) 

INSTRUCTIONS: POTATOES 

  • Dice the potatoes into about ½ inch pieces. Toss in a drizzle of olive oil, paprika, garlic powder, salt and pepper. 

  • Transfer to a baking sheet. 

  • Bake in oven at 425F for 30 minutes. 

  • Once the potatoes are crispy, remove from the oven and set aside. 

INSTRUCTIONS: TURKEY BACON 

  • Cook according to directions on packaging. 

  • Then cut into about ½ inch pieces. 

INSTRUCTIONS: EGGS 

  • Cook one or two eggs over easy in a pan with butter. 

INSTRUCTIONS: HASH 

  1. In a medium saute pan, on medium-low heat add the diced red bell pepper with a drizzle of olive oil. 

  2. Once the red bell peppers begin to soften, add in the potatoes and diced turkey bacon. 

  3. Allow to cook together for about 2 minutes. 

  4. Remove from heat and set aside. 

INSTRUCTIONS: BOWL CREATION 

  1. Then create your bowl! Add the hash to the bottom of the bowl, top with your eggs, and sprinkle on the cheese. 

  2. Enjoy!
