Lemon Poppyseed Bread
One of my favorite treats to get at a coffee shop is lemon poppyseed bread, so I decided to make some at home this week. This recipe is delicious and it is SO light which I love. The yogurt really brings in more moisture which helps it maintain a soft texture. If you prefer a strong lemon taste, I would add another tablespoon or two of lemon juice to your bread.
I recommend using plain yogurt and whole milk, but you can use a lower fat milk and yogurt if you prefer. I also put a lot of poppyseeds in my bread, but feel free to decrease the amount if you don’t love poppyseeds!

RECIPE CARD
INGREDIENTS:
¾ cup maple syrup
¾ cup unsalted butter (room temperature)
2 eggs
⅓ cup plain yogurt
⅔ cup whole milk
¼ cup lemon juice
1 tsp baking soda
2 cups flour
1 tbsp poppyseeds
INSTRUCTIONS:
Preheat oven to 350F.
In a large mixing bowl or stand mixer, combine maple syrup, unsalted butter, eggs, yogurt, whole milk, and lemon juice. Thoroughly combine. There still may be some chunks from the butter, which is okay!
Next, add in the baking soda, flour, and poppyseeds. Thoroughly combine with the wet ingredients.
Grease a 9x5 pan and transfer the mixture to the pan.
Bake for 45 minutes or until a toothpick comes out clean from the bread.
Allow to cool then serve!
