Healthy Cowboy Caviar
If you need a high protein and veggie packed snack to serve at your Super Bowl party… then look no further.
Generally, cowboy caviar has a lot of dressing or sauce on it, however, this recipe only uses lime and salt & pepper for a “dressing”. This is a light and airy recipe that also packs in a ton of flavor, veggies, and protein.
If you want to kick up the spice level, add in a jalapeno to the mixture!
I served this with Siete tortilla chips, however, it is also delicious as a quick side for any meal you're serving. I’ve also put this combination on a salad before and WOW… absolutely amazing.

RECIPE CARD
INGREDIENTS:
1 can black beans (drained)
1 can black eyed peas (drained)
2 bell peppers (pick your favorite color!) (diced)
1beef steak tomato (diced)
2 avocados
2 limes (juiced)
Salt & pepper
1 small red onion (diced)
INSTRUCTIONS:
In a large bowl, combine all ingredients.
Place in refrigerator for 1-4 hours.
Serve!
