GF Oatmeal Chocolate Chip Cookies

Oatmeal chocolate chip cookies are one of my absolute favorite cookies. However, I hadn’t found a GF version that I liked, until these. I love the texture that the granola adds to the cookies and the chocolate adds even more flavor. Yum! 

I use a mixture of dark chocolate chips and semi-sweet chocolate chips when I bake these. However, you can use whichever type of chocolate is your favorite, or whatever you have at home. Any version of chocolate in this recipe is DELICIOUS. 

As always, the size of the cookie dough balls do not matter as long as all the cookies you’re baking at one time are about the same size. For bigger cookie dough balls, you may want to bake them for an additional 2 minutes.

RECIPE CARD

INGREDIENTS:

  • 10 tbsp butter (room temp, can be salted or unsalted!)

  • 2 eggs 

  • ½ cup maple syrup

  • 1 tsp vanilla 

  • 2 ¾ cup almond flour 

  • ⅓ cup brown sugar 

  • 1 tsp baking soda 

  • 1 cup chocolate chips 

  • 1 cup granola

INSTRUCTIONS: MAKING THE DOUGH

  1. In a large bowl or stand mixer, combine butter, eggs, maple syrup, and vanilla thoroughly. 

  2. Next, add in the almond flour, baking soda, and brown sugar. Mix thoroughly.
    Finally, mix in the granola and chocolate chips. 

  3. Form into cookie dough balls and place in the refrigerator for 12-72 hours.

INSTRUCTIONS: BAKING

  1. When ready to bake your cookies, preheat oven to 350F. 

  2. Evenly disperse cooking on a baking sheet. 

  3. Bake for 10 minutes. 

  4. Remove and serve!
