Vegan Chili
Ugh I love this recipe! This is yet another simple crock pot recipe, but this is vegan. I love having high protein, veggie packed meals and this recipe checks those boxes.
I call for three different types of beans in this recipe, but you can use any type of beans you prefer in your chili. Some of my loved ones are not fans of kidney beans, so in that case, I would just omit kidney beans and replace them with pinto or black beans.
I served this with cheese and Simple Mills crackers. However, if you want to keep it vegan, you can use Vegan Cheese or just omit the cheese completely. This is also delicious with tortilla chips, saltines, or your favorite bread!

RECIPE CARD
INGREDIENTS:
1 can kidney beans
1 can pinto beans
1 can black beans
1 yellow onion
1 tbsp chili powder
½ tsp garlic
½ tbsp paprika
½ tbsp oregano
1 cup corn
3 diced red peppers
INSTRUCTIONS:
In a crock pot, add all ingredients.
Cook on low for 6-8 hours. Cook on high for 2-4 hours.
