Mediterranean Salmon & Goat Cheese Orzo

Salmon and orzo are a great pairing as we wrap up summer. Enjoy this flavor packed meal!

RECIPE CARD

TIME TO COOK: about 30 minutes (and 1 hour to marinate)

INGREDIENTS: ORZO

  • Orzo

  • 1 pint cherry tomatoes (halved)

  • 14.5 oz spinach

  • 2 oz goat cheese

INGREDIENTS: SALMON MARINATE

  • 2 salmon fillets

  • 1/2 tbsp basil

  • 1 tsp garlic

  • 1/2 tbsp olive oil

  • 1 lemon (juiced)

 

INSTRUCTIONS

  1. In an airtight container, place salmon, basil, garlic, lemon juice, olive oil, salt and pepper. Allow to marinate for 1 hour.

  2. Turn oven to 425F and line a small baking sheet with parchment paper.

  3. Place the salmon on the baking sheet and put in oven for 12 minutes, then flip. Cook for another 12 minutes or until salmon is thoroughly cooked.

  4. Cook orzo according to package.

  5. In a medium sauté pan on low heat, add a drizzle of olive oil, cherry tomatoes and spinach. Stir regularly until spinach and tomatoes are wilted.

  6. Once orzo is cooked, drain water. Combine goat cheese, cherry tomatoes and spinach.

  7. Serve salmon and orzo. Enjoy!
