Mediterranean Chickpea Rice Bowls

I made this on a whim when we had a few guests unexpectedly come over for dinner. It was super simple but also flavor packed. This is the PERFECT weeknight dinner, but also easy to scale for large groups. Enjoy!

RECIPE CARD

TIME TO COOK: about 20 minutes

INGREDIENTS

  • 1/2 tbsp basil

  • 1/2 tbsp oregano

  • 1/2 tbsp paprika

  • Salt & pepper

  • 1 can chickpeas (drained)

  • 2 cups uncooked basmati rice

  • Cucumber & tomato salad

  • Hummus

 

INSTRUCTIONS

  1. Cook rice according to directions.

  2. In a small pan on medium heat, combine chickpeas, basil, oregano, and paprika. Cook until desired texture.

  3. Once the rice is done, combine chickpea mixture with rice.

  4. Serve with avocado, cucumber & tomato salad and hummus. Enjoy!
