I’m loving citrus as we start to wrap up summer. This is a DELICIOUS sheet pan to serve in a bowl or as tacos. Enjoy!

RECIPE CARD

TIME TO COOK: about 30 minutes

INGREDIENTS

  • 1 ½ juiced limes

  • 1 tbsp paprika

  • ½ tbsp chili powder

  • ½ tbsp coriander

  • 1 green pepper

  • 1 red pepper

  • 1 yellow pepper

  • 1/2 red onion

  • 1 lb chicken breast

 

INSTRUCTIONS

  1. Cut chicken breasts into 1 inch pieces.

  2. In a large airtight container, combine lime juice, paprika, chili powder, coriander and cut chicken. Marinate for 1.5 hours in the fridge.

  3. When the chicken has about 20 minutes left to marinate, heat oven to 425F and line large baking sheet with parchment paper.

  4. Clean and cut peppers into strip.

  5. Once chicken is marinated, evenly distribute on the pan. Add peppers to pan.

  6. Place in oven for 25 minutes or until chicken is thoroughly cooked.

  7. Serve!

 

PS – I served this with tortillas, guacamole, lettuce, and cheese. This is also great with rice or cauliflower rice.
