Summer Meatsauce
Generally, I don’t like pasta meat sauce. If find it to be really heavy, especially during the summer. This is a DELICIOUS version of pasta meat sauce and it is great for the summer. Enjoy!
RECIPE CARD
TIME TO COOK: about 1 hour
INGREDIENTS: SAUCE
6 Campari tomatoes (quartered)
1 pint cherry tomatoes
5 cloves garlic
¼ yellow onion
1 tbsp basil
1 tbsp oregano
2 tbsp salt
INGREDIENTS: TO COOK GROUND CHICKEN
1lb ground chicken
1 tbsp butter
½ tbsp basil
½ tbsp oregano
½ tbsp garlic
INGREDIENTS: TO SERVE
1lb pasta
Parmesan cheese
2 tbsp butter
INSTRUCTIONS
Heat oven to 450F. Line a 9x13 pan with parchment paper.
Add all sauce ingredients to the pan. Place in oven for 25 minutes.
When the sauce has about 10 minutes left, heat medium sauce pan to medium heat. Add all ingredients under “INGREDIENTS: TO COOK GROUND CHICKEN”.
Stir the ground chicken regularly until thoroughly cooked (until there is no visible pink). Set aside.
Remove sauce from oven, put sauce contents in a large bowl. Using a hand blender, combine sauce ingredients. Place sauce back into 9x13 pan.
Add the ground chicken mixture to the 9x13 and place in oven for an additional 25 minutes with 2 tbsp butter.
Cook pasta according to directions.
Once pasta is cooked and drained, combine sauce with the pasta.
Serve and top with parmesan!
PS – You can combine the sauce ingredients in a normal blender or food processor if you don’t have a hand blender.
