Black Bean Stuffed Peppers
Stuffed peppers are great because they contain all you need for a great meal. It is also an easy clean up meal, which is great for busy weeknights. This is a great, quick and vegetarian meal. Absolute delicious and SO easy to make. Enjoy!
RECIPE CARD
TIME TO COOK: about 30 minutes
INGREDIENTS
1 can black beans (drained)
1 cup uncooked white rice
1 tbsp paprika
1/2 tbsp chili powder
1/2 tbsp coriander
1/2 cup shredded cheddar cheese
INSTRUCTIONS
Cook rice according to directions.
Line a large baking sheet with parchment paper. Turn oven to 350F.
Clean and halve the peppers. Lightly drizzle with olive oil. Place on pan.
Put peppers in the oven for 15 minutes.
While peppers are in the oven, combine drained black beans, rice, paprika, chili powder and coriander. Stir on low heat until thoroughly combined.
Remove peppers from oven. Put the rice and bean mixture in the peppers.
Cover the pan with aluminum foil and place in oven for 10 minutes.
Remove from oven and remove aluminum foil. Sprinkle cheese on top of the peppers. Place back in the oven for 5 minutes (or until cheese is melted).
Serve!
