Italian Salmon & orzo

This is hands down one of my FAVORITE recipes from this summer. Absolutely delicious, flavor packed and SO light. Enjoy!

RECIPE CARD

TIME TO COOK: about 30 minutes

INGREDIENTS

  • 5 Roma tomatoes (diced)

  • 4 cloves garlic (diced)

  • 1/4 cup yellow onion (diced)

  • 1/4 tbsp basil

  • 1/4 tbsp oregano

  • 2 salmon filets

  • One box of orzo

  • 1/2 cup Parmesan cheese

  • 14.5 oz spinach

 

 INSTRUCTIONS

  1. Re-heat oven to 350F. Line a small baking sheet with parchment paper.

  2. Begin boiling water for orzo.

  3. Combine the tomatoes, garlic, onion, basil, and oregano with salt, pepper and 1/2 tbsp olive oil. Place mixture in a medium sauté pan on low heat. Add the spinach to the pan.

  4. Place the salmon filets on the baking sheet. Top each filet with about 1 tbsp of the tomato mixture. Put in oven. Cook for about 25 minutes, or until the salmon is thoroughly cooked.

  5. Cook and drain orzo according to directions.

  6. Once the orzo is drained, combine the remaining tomato mixture with the orzo. Add 1/2 cup parmesan

  7. After salmon is thoroughly cooked, serve orzo and salmon.

  8. Enjoy!
