Eggs bites are the perfect breakfast meal prep to make. I love having these in the refrigerator for a quick, high protein breakfast. This particular recipe is light and veggie packed. While this variation calls for feta cheese, I really like to put goat cheese in this recipe as well. 

These will stay good in the refrigerator for about 4-5 days or in the freezer for 1 month. You can reheat these in the microwave or the oven.

RECIPE CARD

MAKES: 6 egg bites

INGREDIENTS:

  • ½ cup spinach 

  • ½ pint cherry tomatoes 

  • ¼ cup feta cheese 

  • 5 eggs 

  • ⅛ cup water 

  • Salt & pepper

INSTRUCTIONS:

  1. Pre-heat oven to 350F. 

  2. Thinly dice spinach. Thinly dice cherry tomatoes. 

  3. In a medium bowl, crack 5 eggs and thoroughly stir them. Add in the water and salt & pepper with the eggs. Thoroughly mix. 

  4. Using butter, thinly coat each muffin tin. 

  5. Add ½  tbsp spinach and ½ tbsp cherry tomatoes to each muffin tin. Add in ½ tbsp feta cheese to each muffin tin. 

  6. Evenly distribute the egg mixture into each of the 6 muffin tins. 

  7. Place muffin tin in the oven for 20 minutes. 

  8. Allow to cool. 

  9. Place in food storage containers.
