Loaded Greek Salad
I made this salad for lunch almost every single day during the summer. It is delicious and filling.
For this recipe, I prepared the rice and chicken on Sunday. I also clean and slice the tomatoes and cucumbers. You can store the rice in a container, the chicken in a container, and the cucumbers & tomatoes in a container. Then each night when preparing lunch for the next day, add the lettuce, cucumber & tomatoes, rice, and chicken to a large travel container. I put the dressing in a small container that fits inside of the salad bowls.
It takes about 5 minutes to prepare the salad each evening because all of the other ingredients are prepared. Fully preparing the salad each night makes the morning way smoother.
My favorite greek salad dressings are the Mother Raw Greek Salad Dressing or the Primal Kitchen Greek Salad Dressing.

MAKES: 5 salads
INGREDIENTS: SALADS
1.5lb chicken breasts
5 hearts of romaine (cleaned and shredded)
1 1/2 pints cherry tomatoes (cleaned and diced)
2 cups uncooked wild rice
8 oz feta
2 english cucumber (cleaned and diced)
Greek salad dressing
INGREDIENTS: CHICKEN MARINATION
1 lemon juiced
1 tbsp oregano
½ tbsp basil
¼ cup greek salad dressing
INSTRUCTIONS: PREPARING CHICKEN
In an airtight container, combine chicken breasts, lemon juice, oregano, basil, ¼ cup greek salad dressing and salt & peppers. Allow to marinate for 1-2 hours.
Pre-heat oven to 425F. Place chicken breasts on baking sheet and bake in oven for 20 minutes or until chicken is thoroughly cooked.
Allow chicken to cool.

Cook rice according to packaging.
Allow to cool.
INSTRUCTIONS: PREPARING VEGETABLES
Clean and dice cherry tomatoes.
Clean and dice cucumbers.
Clean and shred romaine lettuce.
INSTRUCTIONS: PREPARING SALAD
On the bottom, add 1 ½ cup shredded lettuce. Next add the ¼ cup cucumbers and ¼ cup tomatoes.
Add ⅓ cup wild rice.
Add ½ cup shredded chicken.
Add ⅛ cup feta cheese.
Add greek salad dressing to a small container and place it in the large salad container.
