Italian Chicken Orzo

This is one of my absolute favorite dishes I’ve ever created. The chicken is SO flavorful and the light orzo pairs so well. This is a household favorite and I hope you enjoy!

RECIPE CARD

TIME TO COOK: about 35 minutes (plus 1-2 hours for marinating)

INGREDIENTS: CHICKEN MARINATE

  • ¼ cup white onion (chopped)

  • 1 tbsp basil

  • 1 tbsp oregano

  • 1 lb chicken breasts

  • 3 tbsp tomato paste

  • 1 tbsp olive oil

 

INGREDIENTS: OTHER

  • 8 oz orzo

  • 14.5 oz spinach

  • ¼ cup onion (chopped)
    1 tbsp butter

  • ½ cup parmesan (grated)

 

INSTRUCTIONS

  1. In an airtight container, combine all ingredients under “INGREDIENTS: CHICKEN MARINATE”. Allow chicken to marinate for 1-2 hours.

  2. When the chicken is almost done marinate, pre-heat oven to 425F and line a medium baking sheet with parchment paper.

  3. Transfer the chicken to the sheet pan and place in the oven for about 30 minutes. Flip halfway through. Cook until chicken is thoroughly cooked (165F internal temperature).

  4. Cook orzo according to directions on packaging.

  5. While orzo is cooking, place a medium sauté pan on low-medium heat. Add ½ tbsp olive oil, butter, onion, and spinach. Continue to cook until spinach is wilted.

  6. Once orzo is cooked and drained, add orzo to the medium sauté pan. Combine the ingredients thoroughly and add the parmesan cheese.

  7. Once chicken is cooked and orzo is completed, serve!
