Black bean & pepper bowls

I made this dish on a lazy Sunday. I realized how hungry I was and went to throw together some lunch. And it was AMAZING. The simplicity of this recipe is a huge win especially during a busy week or weekend. It is the perfect lunch or dinner for any day of the week. I also really like that it is vegan and whole food focused. Enjoy!

 

RECIPE CARD

TIME TO COOK: about 5 minutes (plus time to cook the rice!)

INGREDIENTS

  • 1 can black beans

  • 2 cups frozen peppers

  • ½ tbsp paprika

  • ½ tbsp chili powder

  • ¼ tbsp cumin

  • 1 tsp salt

  • 2 cups uncooked rice (or cauliflower rice) 

 

INSTRUCTIONS

  1. Cook rice according to directions.

  2. Heat a medium saute pan on medium heat. In the ban combine a drained can of black beans, peppers, paprika, chili powder, cumin and salt.

  3. Stir the mixture regularly. After about 5 minutes, serve!

TIP: I also love to put this combination on a salad and add guacamole. This is a quick and protein packed meal that is perfect for lunches.
