Bulgolgi Beef Bibimbap

Bibimbap is a choose your own adventure kind of meal. I love it for large groups because you can easily accommodate for dietary restrictions and people can take what they want and leave what they don’t. The veggies in this recipe serve two, but we had left over ground beef and rice that we used throughout the rest of the week for lunches. The focus of this recipe is the beef, which is delicious. Enjoy!

RECIPE CARD

TIME TO COOK: about 20 minutes

INGREDIENTS

  • 14.5 oz ground beef

  • 5 large carrots (peeled)

  • 1 cup frozen corn

  • 1 green pepper (chopped)

  • Gochujang sauce

  • 2 cups uncooked white rice

  •  

INGREDIENTS: SAUCE

  • 1/8 cup soy sauce

  • 1 tbsp maple syrup

  • 1/3 cup green onion (chopped)

  • 1/2 tsp garlic powder

  • 1 tbsp sesame seeds

  • 1/2 tsp black pepper

 

INSTRUCTIONS

  1. Cook rice according to packaging.

  2. Combine all “INGREDIENTS: SAUCE” in a small mixing bowl.

  3. In a medium sauté pan on medium heat, add green pepper, corn and carrots. Add ½ tbsp olive oil and 1/8 cup of the sauce to the pan. Cook until veggies are desired texture and temperature.

  4. In a separate pan, add the ground beef and remaining sauce on medium heat. Cook until the meat is thoroughly cooked (around 8-9 minutes).

  5. Serve and top with Gochujang!
