GF, DF, Egg-Free Chocolate Chip Cookies

I have a few friends that are GF, DF and Egg-Free. I always felt bad when I would just give them a Hu Chocolate bar when they came over for dinner. However, after a lot of recipe testing, I have made a GF, DF, Egg-Free Chocolate Chip Cookie. My GF, DF, and Egg-Free friends have noted that this is a close substitution to a traditional Chocolate Chip Cookie!

RECIPE CARD

 

TIME TO MAKE: 20 minutes (plus time to chill)

MAKES: 10-12

INGREDIENTS:

  • 3 3/4 almond flour

  • 1/2 cup apple sauce

  • 3/4 cup coconut oil (melted & brought to room temp)

  • 1/4 cup coconut sugar

  • 1/2 cup maple syrup

  • 1/2 tsp vanilla

  • 1/2 tsp baking soda

  • 1 cup Hu chocolate gems (or any dairy free chocolate chip)

INSTRUCTIONS

  1. In a mixer bowl (or large bowl!), combine almond flour, coconut sugar, and baking soda. Mix on low speed until thoroughly combined.

  2. Add apple sauce, coconut oil, maple syrup, and vanilla. Mix on medium speed until thoroughly combined.

  3. Fold in hu chocolate gems.

  4. Form into cookie dough balls and place in fridge for 2-8 hours.

  5. When ready to bake, pre-heat oven to 350F. Bake for 9 minutes.

  6. Allow to cool. Serve!
