Tomato & Zucchini Chicken Sheet Pan

In between the chaos of the holidays, we are all trying to find easy meals to make. I also like to focus on making meals that really nourish me to help keep my energy up throughout this magical (but sometimes chaotic) time of year.

This recipe is so easy if you’re looking for something quick to throw in the oven. It is packed with flavor and real foods. I love to serve this sheet pan over rice or with potatoes, but you absolutely can serve it alone.

RECIPE CARD

 

TIME TO MAKE: 30 minutes

SERVES: 2-3

INGREDIENTS:

  • 2 yellow zucchini

  • 1 lb chicken breasts

  • 5 tomatoes

  • 1 bag broccoli

  • 1 tbsp basil

  • 1 tbsp paprika

  • 1 tbsp oregano

  • 1/4 tbsp garlic

  • 1 tbsp olive oil

INSTRUCTIONS

  1. Pre-heat oven to 425F.

  2. In a large bowl, add zucchini, tomatoes, broccoli, olive oil, basil, paprika, oregano, and garlic. Combine thoroughly.

  3. Evenly distribute the vegetables to a large baking sheet.

  4. Add the chicken breasts to the baking sheet.

  5. Place in oven for 25 minutes.

  6. Serve!
