Blueberry Bread

I love having a bread available as a quick and easy breakfast and snack, especially during the holidays. This bread is SO good. The blueberries really add so much flavor, but even the bites without blueberries are delicious.

It can be tricky to tell when breads are done. I always use a toothpick to check. You want to make sure the toothpick comes out clean. Also the top of the bread will “pop” when its almost done. You will notice it gets fluffier.

RECIPE CARD

 

TIME TO MAKE: 60 minutes

SERVES: 8-10

INGREDIENTS:

  • ¾ cup maple syrup

  • ½ cup butter (room temperature)

  • 2 eggs

  • 1 cup whole milk

  • 1 ½ tsp baking powder

  • 2 cups flour 

  • ¼ cup brown sugar (plus some to top with)

  • 1 pint blueberries

 

INSTRUCTIONS

  1. Pre-heat oven to 350F. Coat the inside of a bread pan with coconut oil.

  2. In a standing mixer, add maple syrup, butter, eggs, and milk. Combine on low.

  3. Add baking powder, flour and brown sugar. Combine on low.

  4. Add pint of blueberries. Combine with a spoon.

  5. Transfer the mixture to the bread pan.

  6. Place in oven and cook for ~35 minutes (or until thoroughly cooked).

  7. Allow to cool.
    Serve!
