Garlic Potatoes

This is hands down my favorite version of potatoes. While it is a little time consuming, I PROMISE it is worth it. Enjoy!

RECIPE CARD

TIME TO COOK: about 45 minutes

INGREDIENTS:

  • 1 lb baby yellow potatoes

  • 5 garlic cloves – minced

  • 3 tbsp butter

  • 1 tbsp oregano

  • 1 tbsp thyme

 

INSTRUCTIONS POTATOES

  1. Heat oven to 425F and line large baking sheet with parchment paper.

  2. Wash and cut all potatoes in half.

  3. Place potatoes in a large pot and fill with water (fill so there’s ½ inch of water above the potatoes)

  4. Bring water to a boil, then decrease the heat to low. Allow potatoes to simmer for 15 minutes.

  5. Remove potatoes from water and mix with butter, oregano, thyme, salt and pepper.

  6. Once combined, lay on large baking sheet. 

  7. Put in oven. Cook for 25 minutes (until potatoes are golden brown).

  8. Serve!
