Breakfast Burrito

When I think about breakfast burritos, I’m normally trying to figure out where to find the best one. However, there are Saturdays when I don’t want to have to leave my apartment so I created my ultimate version of a breakfast burrito. A delicious weekend brunch! This breakfast burrito combines some of my favorite things: guac, black beans, and bacon. You can add anything you want (or anything. you have!) to this burrito. Enjoy!

RECIPE CARD

TIME TO COOK: about 30 minutes

INGREDIENTS: GUACAMOLE

  • 1 avocado

  • ½ pint of grape tomatoes – diced

  • ¼ red onion - diced

  • 1 lime – juiced

INGREDIENTS: BURRITO

  • 1 can black beans

  • 5 scrambled eggs

  • 1 tbsp butter

  • ½ cup shredded Mexican cheese

  • 5 pieces bacon

  • 1 tsp chili powder

  • 1 tsp paprika

  • Burrito tortillas

 

INSTRUCTIONS

  1. Cook bacon according to directions.

  2. Combine avocado, cherry tomatoes, onion, lime, and salt & pepper in a small bowl.

  3. On low heat, place the butter in a small sauté pan. Scramble the 5 eggs, paprika, and chili powder in a small bowl and add to the sauté pan. Slowly stir the eggs on low until fully cooked.

  4. Drain the black beans and add them to a small pan. Warm on low.

  5. In a large sauté pan on low heat begin to warm the tortilla.

  6. Sprinkle desired amount of shredded cheese on the tortilla. Add egg, crumbled bacon, black beans, and guacamole to the tortilla.

  7. Carefully remove the tortilla from the pan and roll into a burrito.

  8. Serve!
