Ground Pepper & bison Tacos

Another variation on tacos! I loved this because it is a one pan meal that is super easy on a busy weeknight. Enjoy!

RECIPE CARD

TIME TO COOK: about 20 minutes

INGREDIENTS:

  • 1 tbsp Paprika

  • ½ tbsp Chili powder

  • ½ tbsp Coriander

  • 14.5oz ground bison

  • 2 green peppers

  • 2 red peppers

  • Guacamole

  • Shredded cheese

  • Tortillas

INSTRUCTIONS

  1. Make guacamole (recipe here!)

  2. Combine paprika, chili powder, and coriander.

  3. Clean and dice red and green peppers.

  4. Add 1 tsp olive oil to a large sauté pan on medium heat. Add peppers to pan.

  5. Combine the bison meat with the seasoning. Add bison to the pan.

  6. Stir regularly until bison is thoroughly cooked, and peppers are soft (about 7-9 minutes).

  7. Serve with tortillas, cheese, and guacamole!
