Chicken & Peppers

FABULOUS week night meal. This is helpful because you can put it in tacos or make a bowl out of it with rice. You can also use it as meal prep which is fabulous. This is also a great recipe for groups that have lots of dietary restrictions!

The key to any dish with chicken breasts is finding good quality meat. I love Force of Nature, however, look for organic and anti-biotic free chicken. The quality of the chicken impacts the dish and the better the quality of chicken, the better your meal will be. Enjoy!

RECIPE CARD 

TIME TO COOK: about 30 minutes

INGREDIENTS

  • 3 chicken breasts – diced

  • 2 red peppers – sliced

  • 2 green peppers – sliced

  • 2 yellow peppers – sliced

SEASONING

  • ½ tbsp paprika

  • ½ tbsp chili powder

  • ¼ tbsp coriander

  • Salt & pepper

SERVE WITH: Guacamole, tortillas, rice, salad

 INSTRUCTIONS

  1. Cover a large baking sheet with parchment paper. Turn oven to 425F.

  2. Once chicken and peppers are cleaned and cut, place in a large bowl.

  3. Thoroughly combine spices, peppers, chicken and 1 tbsp olive oil in the large bowl.

  4. Evenly disperse on baking sheet. Place baking sheet in oven for around 20 minutes (until chicken is thoroughly cooked).

  5. Serve!
