Salmon, Orzo & Asparagus Bowl
I make some form of salmon and orzo almost every week, but I love this recipe. The combination of flavors is delicious and this is a great meal for the summer. Plus it is SIMPLE. You probably have all of the seasoning in your pantry, which makes it SO easy to put together on weeknight. Enjoy!

TIME TO COOK: about 40 minutes
INGREDIENTS
14.5 oz Orzo
½ cup parmesan
3 oz goat cheese
2 tbsp butter
2 Salmon filets
¼ garlic powder
1 tbsp basil
1/2 lemon
1 bunch asparagus
INSTRUCTIONS
Turn oven to 425F and line a large baking sheet with parchment paper.
Coat the salmon in the garlic powder, basil, lemon juice, salt and pepper.
Place the salmon on the baking sheet and put in the oven for 25 minutes. Flip halfway through.
Drizzle the asparagus with olive oil, salt and pepper. When flipping the salmon, add the asparagus to the pan (cook for about 12 minutes).
Follow the directions provided with the orzo.
Once the orzo is cooked and drained, add the parmesan cheese, goat cheese, and butter to the pan. Stir until thoroughly mixed. Add salt and pepper to taste.
Serve!
