Bison Meatball Bowls

In case you couldn’t tell, bowls are my favorite. So simple and it’s a great way to get rid of things in your fridge. I loved this bowl and will definitely be making it again soon!

RECIPE CARD

TIME: about 45 minutes

INGREDIENTS:

  • 1 small yellow onion

  • 4.5 oz tomato paste

  • 14 oz ground bison

  • 1 egg

  • 1/2 cup shredded parm

  • 1 tsp garlic powder

  • 1.5 tbsp cilantro

  • 1.5 tbsp parsley

  • Rice

  • English cucumber

  • Pint cherry tomatoes

  • 1 lemon

  • 2 oz feta cheese

  • Salt & pepper

 

GROUND BISON MEATBALL

INSTRUCTIONS

  1. Turn oven to 400F. Line sheet pan with silicon mat or parchment paper.

  2. Dice onion.

  3. In a large bowl, combine bison, tomato paste, onion, egg, shredded parmesan, 1 tbsp parsley, 1 tbsp cilantro and garlic powder. Mix until thoroughly combined.

  4. Using a cooking scoop, portion meatballs onto a sheet pan.

  5. Cook for 15 minutes. Flip and cook for an additional 15 minutes. Internal temp should be above 160F.

  6. Ready to serve! 

 

CUCUMBER & TOMATO SALAD

INSTRUCTIONS

  1. Dice English cucumber. Quarter tomatoes. Juice ½ lemon (add more to preference).

  2. Combine cucumber, tomatoes, lemon juice and feta in one bowl. Mix together and add salt & pepper!

 

MEDITERRANEAN RICE

  1. Follow directions on packaging

  2. Add parsley & cilantro as desired

  3. Add 1.5 tbsp olive oil

SERVE! Combine all ingredients in. your desired proportions!
